In 2003, I was hospitalized for diabetic ketoacidosis and was immediately put on insulin and oral medications. Within months of working with a nutritionist to change my diet, I was able to stop using insulin completely. I drastically lost weight, regained my energy and felt fantastic. The more weight I lost, the less oral medication I needed and within three years, I had put diabetes in total remission.
Then in 2008, I was diagnosed with thyroid cancer. Within days of being put on thyroid medication, diabetes reared its ugly head, forcing me back on insulin and oral pills. When 2010 started, I was taking more medication than ever before and I was at a point where the doctors were prescribing additional pills to manage the side effects of my other medications. I was always tired and moody. I was also severely depressed and gaining weight at a startling rate. Then the gastrointestinal problems started. I was lucky if I could get out of bed more than one day a week. I was even luckier if I could hold down a meal or even a glass of water.
Once again, I turned to nutritional counseling to look for problems in my diet. By learning what foods inhibit proper uptake of thyroid hormone, I was able to drastically drop my dosage. The more positive changes I saw, the more positive changes I wanted to make. So I started to reduce the amount of gluten in my diet, including in my medications, and that allowed me to reduce my insulin doses. The combination of reduced gluten and reduced lactose intakes started to bring relief to my gut.
I am living proof that food has the power to hurt and to heal.
