Sunbutter spoon fudge {thyroid + autoimmune-friendly recipe}

These past two weeks, each time I’ve had a craving for sweets in the evening, I’ve been turning to this simple, healthy spoon fudge. This spoon fudge is a loose, chocolaty rendition on fudge and requires just minutes of preparation. It’s really as simple as mixing together a few ingredients — no heating or refrigeration required! And best of all, it is thyroid- and autoimmune-friendly! It’s the perfect way to incorporate thyroid-stimulating and immune-supporting coconut oil and coconut flour. Because of the nut butter and honey, it is a bit rich, so just a spoonful or two is more than enough! This recipe is naturally gluten-free and dairy-free.

Sunbutter Spoon Fudge
Makes 2-3 small servings

Ingredients:
1/4 cup chunky Sunbutter or other nut butter of your choice (just beware of peanuts when trying to improve your thyroid and immune system)
1/8 cup raw coconut flour
1/8 cup unsweetened cocoa powder or raw cacao powder
1/8 cup coconut oil
1/8 cup (heaping) raw honey, or more to taste
pinch sea salt

Method:
In medium bowl, mix wet ingredients. In small bowl, mix dry ingredients. Add dry ingredients to wet and mix until well combined. Eat and enjoy!
