The most delicious grain-free/dairy-free banana bread

I’ve been playing around with using grassfed gelatin powder in my baking to improve the texture. I’ve seen bloggers use it for all kinds of recipes but I thought using it in a grain-free baked good with coconut flour and egg would be especially helpful. And it worked! Instead of a chalky or dry bread, this has an awesome cakey crumb and is moist and dense, but also light (if that makes sense).

But the best part about this recipe is that it is multipurpose!  You can easily swap out the banana for pumpkin, butternut squash, carrot or my favorite, sweet potato. Yum!!

And of course, you’re sneaking in a healing food: grassfed gelatin for helping a leaky gut (and therefore your autoimmune or thyroid disease). Win-win!

Grain-free banana bread

Ingredients:
2 large bananas, mashed
4 eggs, whisked together
1/2 cup honey (or, up to 3/4 cup if you like it sweeter)
2 T grassfed gelatin powder
1 teaspoon each: ground ginger powder, cinnamon, vanilla
6 T coconut flour
1/4 t baking soda
1/4 t baking powder (baking powder isn’t technically grain-free but you can Google how to make your own grain-free variety if that is important to your diet)
Mix in of your choice: pecans, chocolate chips, walnuts, raisins, etc would all be yummy. If I’m being honest, I have to say that I mixed in some homemade pastured chicarron (kind of like how people put bacon in baked goods). :)

Method:
Mix all ingredients together and pour into parchment paper lined baking dish. (Dish size depends on your preference; I’ve made this in a traditional glass bread pan, or a glass baking dish, both work well but cooking times will vary).

Allow to sit for 5-10 minutes before placing in 350 degree oven (resting helps the coconut flour to absorb some moisture and improve texture).

Bake for about 30 minutes or until cooked through. (A bread pan will take closer to 45 minutes or so, so you must keep checking either way). It is cooked through when it is browned and no longer wet in the middle.

Cool (or don’t, if you can’t wait!), eat, and enjoy! It’s really good hot out of the oven and topped with fat of your choice.
